Mixed Sauce Pasta

Mixed sauce pasta is a delightful combination of tangy tomato sauce and creamy white sauce, tossed with pasta and a medley of vegetables, making it a perfect meal for any time of the day. Boil 250 grams of pasta (penne or fusilli) in a large pot of salted water until al dente. Drain and set aside.

In a pan, heat 2 tablespoons of oil and sauté 1 finely chopped onion, 1/2 cup chopped bell peppers, 1/2 cup chopped carrots, and 1/2 cup green peas until the vegetables are tender.

Add 1 cup of tomato puree, 1 teaspoon of red chili powder, 1/2 teaspoon of garam masala, and salt to taste. Cook for 5-7 minutes until the tomato sauce thickens.

In another pan, melt 2 tablespoons of butter and add 2 tablespoons of all-purpose flour (maida). Cook for 2 minutes on low heat, stirring continuously.

Gradually add 1 cup of milk to the flour mixture, whisking continuously to avoid lumps. Cook until the white sauce thickens. Season with salt and pepper.

Combine the tomato sauce, white sauce, and cooked pasta in a large pan. Mix well and cook for 2-3 minutes until the pasta is well coated with the sauces.

Garnish with grated cheese and chopped fresh coriander leaves. Serve hot.
