Mixed Fried Rice
Mixed Fried Rice is a delicious and colorful Indo-Chinese dish that combines a variety of vegetables, rice, and flavorful spices to create a mouth-watering meal. Ingredients: Eggs, Basmati rice, Beans, Ginger, Vinegar, Cooking oil, Soy sauce, Salt, Carrot, Onion, Capsicum, Black pepper powder, Garlic, Green chilli, Cabbage

Rinse 1.5 cups of basmati rice thoroughly and soak it in water for 30 minutes. After soaking, drain the water and set the rice aside.

In a large pan, heat 2 tablespoons of oil and add 1 teaspoon of finely chopped garlic, 1 teaspoon of finely chopped ginger, and 2 finely chopped green chilies. Sauté for a minute on medium heat.

Add 1/4 cup of finely chopped onions and sauté until they turn translucent.

Add 1/2 cup of chopped vegetables (carrots, beans, bell peppers, and cabbage) and cook for 3-4 minutes until they are slightly tender.

Add the soaked and drained rice to the pan and mix gently with the vegetables.

Add 3 cups of water, 1 teaspoon of salt, and 1/2 teaspoon of black pepper powder. Stir well and bring the mixture to a boil.

Reduce the heat to low, cover the pan, and cook the rice for 15-20 minutes or until the rice is fully cooked and the water is absorbed.

In a separate pan, heat 1 tablespoon of oil and scramble 2 beaten eggs. Add the scrambled eggs to the cooked rice and mix gently.

Finally, add 2 tablespoons of soy sauce and 1 tablespoon of vinegar to the rice. Mix well and cook for another 2 minutes.
