Lucknowi Biryani
Lucknowi Biryani is a royal and aromatic dish from the city of Lucknow, known for its delicate flavors and tender meat. This mouth-watering dish is a perfect blend of rice, spices, and succulent meat.
Ingredients: Chicken, Basmati rice, Mint leaves, Salt, Clove, Onion, Fennel seeds, Coriander, Turmeric powder, Green cardamom, Tomato, Cooking oil, Curd, Cumin seeds, Garam masala, Red chilli powder, Ginger garlic paste, Cinnamon stick

Wash and soak 500 grams of basmati rice for 30 minutes. Drain and set aside.

Marinate 500 grams of chicken or mutton pieces with 200 grams of yogurt, 2 teaspoons of ginger-garlic paste, 1 teaspoon of red chili powder, 1/2 teaspoon of turmeric powder, 1 teaspoon of garam masala, salt to taste, and 2 tablespoons of oil. Mix well and refrigerate for at least 1 hour.

In a large pan, heat 4 tablespoons of oil or ghee. Add 2 thinly sliced onions and fry until golden brown. Remove half of the fried onions and set aside for garnishing.

Add 2 chopped tomatoes, 1/2 teaspoon of cumin seeds, 1/2 teaspoon of fennel seeds, 2-3 green cardamoms, 2-3 cloves, and 1-inch cinnamon stick to the pan. Cook until tomatoes are soft.

Add the marinated meat to the pan and cook on medium heat until the meat is tender and the oil separates from the masala.

In a separate pot, bring 1.5 liters of water to a boil. Add soaked rice, 1 teaspoon of salt, and 1 teaspoon of oil. Cook the rice until it's 70% cooked. Drain the rice and set aside.

Layer the cooked meat and partially cooked rice in a heavy-bottomed pan. Sprinkle the reserved fried onions, chopped coriander leaves, and chopped mint leaves on top.

Seal the pan with a tight-fitting lid or aluminum foil. Cook on low heat for 20-25 minutes until the rice is fully cooked and the flavors have melded together.
