Gobhi Fried Rice
Gobhi Fried Rice is a delicious and healthy fusion dish that combines the goodness of cauliflower with the classic flavors of Indian fried rice. It's a perfect meal for those who love to experiment with flavors and textures.

Wash and cut 500 grams of cauliflower (gobhi) into small florets. Boil them in water with a pinch of salt for 5-7 minutes until they are slightly tender. Drain and set aside.

Cook 250 grams of basmati rice in 500 ml of water until it's 90% cooked. Drain the excess water and spread the rice on a plate to cool.

In a large pan, heat 2 tablespoons of oil. Add 1 teaspoon of cumin seeds and let them crackle.

Add 1 finely chopped onion and 2 finely chopped green chilies. Sauté until the onions turn golden brown.

Add 1 teaspoon of ginger-garlic paste and cook for another minute.

Add the boiled cauliflower florets and stir-fry for 3-4 minutes on medium heat.

Add 1/2 teaspoon of turmeric powder, 1/2 teaspoon of red chili powder, 1/2 teaspoon of garam masala, and salt to taste. Mix well and cook for another 2-3 minutes.

Add the cooked rice to the pan and mix gently, ensuring the rice and cauliflower are well combined.

Garnish with chopped coriander leaves and serve hot with raita or any side dish of your choice.
