In a small bowl, mix 1 teaspoon of active dry yeast with 120 ml of warm water and let it sit for 5 minutes until it becomes frothy.
In a large mixing bowl, combine 250 grams of all-purpose flour, 1 teaspoon of sugar, and 1/2 teaspoon of salt. Add the yeast mixture and 2 tablespoons of olive oil to the dry ingredients and mix well to form a soft dough.
Knead the dough on a lightly floured surface for about 10 minutes until it becomes smooth and elastic. Place the dough in a greased bowl, cover with a damp cloth, and let it rise for 1 hour or until it doubles in size.
Preheat the oven to 200°C. Line a baking sheet with parchment paper.
Punch down the dough and divide it into 8 equal portions. Roll each portion into a long breadstick shape and place them on the prepared baking sheet.
In a small bowl, mix 4 tablespoons of melted butter, 2 minced garlic cloves, and 1 teaspoon of dried parsley. Brush the garlic butter mixture over the breadsticks.
Bake the breadsticks in the preheated oven for 15-20 minutes or until they turn golden brown.
Remove from the oven and let them cool slightly before serving.
