Egg Schezwan Fried Rice is a spicy and flavorful Indo-Chinese dish that combines fluffy rice, scrambled eggs, and a medley of vegetables, all tossed in a fiery Schezwan sauce.

Cook 250 grams of basmati rice as per the package instructions and set aside to cool.

In a small bowl, mix 3 tablespoons of Schezwan sauce, 1 tablespoon of soy sauce, and 1 tablespoon of tomato ketchup. Set aside.

Heat 2 tablespoons of oil in a large wok or pan over medium heat. Add 1 finely chopped onion and 2 finely chopped garlic cloves, and sauté until the onions turn translucent.

Add 1/2 cup of finely chopped vegetables (carrots, beans, bell peppers, and cabbage) to the pan and cook for 3-4 minutes until they are slightly tender.

Push the vegetables to one side of the pan and add 2 beaten eggs to the other side. Scramble the eggs until they are fully cooked.

Mix the scrambled eggs with the vegetables and add the cooked rice to the pan.

Pour the prepared Schezwan sauce mixture over the rice and mix well, ensuring that the rice is evenly coated with the sauce.

Cook for another 2-3 minutes, stirring occasionally. Garnish with chopped spring onions and serve hot.
