Dal Khichdi
Dal Khichdi is a comforting and delicious Indian dish made with rice and lentils, flavored with a blend of spices, and garnished with ghee.
Ingredients: Rice, Yellow moong dal, Ghee, Cumin seeds, Turmeric powder, Hing, Ginger garlic paste, Tomato, Red chilli powder, Coriander, Onion, Salt

Wash and soak 1 cup of rice and ½ cup of yellow moong dal (lentils) in water for 30 minutes.

In a pressure cooker, heat 2 tablespoons of ghee or oil. Add 1 teaspoon of cumin seeds and let them crackle.

Add 1 finely chopped onion and sauté until it turns golden brown.

Add 1 teaspoon of ginger-garlic paste and sauté for a minute.

Add 1 chopped tomato, ¼ teaspoon of turmeric powder, ½ teaspoon of red chili powder, and salt to taste. Cook until the tomatoes become soft.

Drain the soaked rice and dal, and add them to the pressure cooker. Mix well.

Add 4 cups of water and stir. Close the pressure cooker lid and cook for 3-4 whistles on medium heat.

Once the pressure releases, open the cooker and gently mix the khichdi.

In a small pan, heat 1 tablespoon of ghee. Add a pinch of asafoetida and 1 teaspoon of cumin seeds. Once they crackle, pour this tempering over the khichdi.

Garnish with chopped coriander leaves and serve hot with yogurt or pickle.
