Curd Rice
Curd rice, also known as "dahi chawal," is a comforting and delicious South Indian dish made with cooked rice and creamy yogurt, garnished with tempering spices and fresh coriander. Ingredients: Rice, Curd, Green chilli, Hing, Salt, Mustard seeds, Cooking oil, Urad dal, Chana dal, Coriander, Curry leaves

Cook 1 cup of rice in 2 cups of water until it is soft and slightly mushy. Allow the rice to cool down to room temperature.

In a large mixing bowl, whisk 2 cups of fresh curd (yogurt) until smooth.

Add the cooled rice to the whisked curd and mix well. Add salt to taste.

In a small pan, heat 2 tablespoons of oil. Add 1 teaspoon of mustard seeds and let them splutter.

Add 1 teaspoon of urad dal, 1 teaspoon of chana dal, and 1 finely chopped green chili to the pan. Sauté until the dals turn golden brown.

Add 1 sprig of curry leaves and a pinch of asafoetida (hing) to the pan. Sauté for a few seconds.

Pour the tempering mixture over the curd rice and mix well.

Garnish with chopped coriander leaves and serve chilled or at room temperature.
