Chilli Paneer Dry
Chilli Paneer Dry is a popular Indo-Chinese dish featuring crispy paneer cubes tossed in a spicy, tangy sauce with sautéed onions, capsicum, and green chillies.

Cut 200 grams of paneer into small cubes and set aside.

In a bowl, mix 2 tablespoons of cornflour, 2 tablespoons of all-purpose flour (maida), a pinch of salt, and 1/4 teaspoon of black pepper powder. Add water as needed to make a thick batter.

Dip the paneer cubes in the batter, ensuring they are well coated.

Heat oil in a pan for deep frying. Once the oil is hot, carefully add the coated paneer cubes and fry until they turn golden brown. Remove from oil and place on a paper towel to drain excess oil.

In another pan, heat 2 tablespoons of oil. Add 1 tablespoon of finely chopped garlic, 1 tablespoon of finely chopped ginger, and 2-3 chopped green chillies. Sauté for a minute.

Add 1/2 cup of chopped onions and 1/2 cup of chopped capsicum. Sauté for 2-3 minutes until they are slightly softened.

In a small bowl, mix 2 tablespoons of tomato ketchup, 1 tablespoon of red chilli sauce, 1 tablespoon of soy sauce, and 1/2 tablespoon of vinegar. Pour this sauce mixture into the pan with the sautéed vegetables.

Add the fried paneer cubes to the pan and toss well to coat them with the sauce. Cook for 2-3 minutes.

Finally, add 1/2 teaspoon of black pepper powder and salt to taste. Mix well and garnish with chopped spring onion greens.
