Chilli Chicken Dry is a popular Indo-Chinese dish featuring succulent chicken pieces tossed in a spicy and flavorful sauce, perfect as a starter or side dish. Ingredients: Boneless chicken, Vinegar, Red chilli powder, Ginger, Red chilli sauce, Green chilli, Tomato sauce, Spring onion, Soy sauce, Onion, Ginger garlic paste, Capsicum, Corn starch, Garlic, Cooking oil

Cut 500 grams of boneless chicken into bite-sized pieces and marinate with 2 tablespoons of cornflour, 1 tablespoon of ginger-garlic paste, 1 teaspoon of red chilli powder, 1 teaspoon of soy sauce, and salt for 30 minutes.

Heat oil in a kadai or deep frying pan and fry the marinated chicken pieces until golden brown. Remove and set aside.

In another pan, heat 2 tablespoons of oil and sauté 1 tablespoon of finely chopped garlic, 1 tablespoon of finely chopped ginger, and 2-3 chopped green chillies for a minute.

Add 1 large chopped onion and 1 chopped capsicum, and sauté for 2-3 minutes until they are slightly softened.

Add 2 tablespoons of tomato ketchup, 1 tablespoon of red chilli sauce, 1 tablespoon of soy sauce, and 1 teaspoon of vinegar. Mix well and cook for a minute.

Add the fried chicken pieces to the pan and toss well to coat them with the sauce. Cook for 2-3 minutes until the chicken is fully cooked and the sauce thickens.

Garnish with chopped spring onion greens and serve hot.
