Chicken Sweet Corn Soup
Chicken sweet corn soup is a delicious and comforting Indo-Chinese dish that combines tender chicken, creamy sweet corn, and flavorful spices to create a heartwarming soup perfect for any meal. Ingredients: Boneless chicken, Sweet corn kernels, Cooking oil, Garlic, Onion, Soy sauce, Eggs, Chicken stock, Salt, Black pepper powder, Corn starch, Spring onion

In a large pot, heat 2 tablespoons of oil over medium heat. Add 200 grams of finely chopped boneless chicken and cook until it turns white and is cooked through. Remove the chicken from the pot and set aside.

In the same pot, add 1 tablespoon of oil and sauté 1 finely chopped onion and 2 minced garlic cloves until they turn golden brown.

Add 1 liter of chicken stock to the pot and bring it to a boil.

Add 1 cup of sweet corn kernels and the cooked chicken to the boiling stock. Let it simmer for 5 minutes.

In a small bowl, mix 2 tablespoons of cornstarch with 4 tablespoons of water to create a slurry. Slowly pour the slurry into the soup while stirring continuously to thicken the soup.

Beat 2 eggs in a separate bowl and slowly pour them into the soup while stirring continuously to create egg ribbons.

Season the soup with salt, black pepper, and 1 tablespoon of soy sauce. Adjust the seasoning according to your taste.

Garnish the soup with chopped spring onions and serve hot.
