In a large mixing bowl, combine 500 grams of minced chicken, 1 finely chopped onion, 2 tablespoons of chopped coriander leaves, 1 tablespoon of ginger-garlic paste, 1 finely chopped green chili, 1 teaspoon of garam masala, 1 teaspoon of red chili powder, 1/2 teaspoon of turmeric powder, 1/2 teaspoon of cumin powder, and salt to taste. Mix well to form a smooth mixture.
Divide the chicken mixture into equal portions and shape them into long cylindrical kebabs around skewers. Make sure the kebabs are evenly shaped and firmly attached to the skewers.
Preheat a grill or oven to 180°C. Place the skewers on the grill or in the oven and cook for 15-20 minutes, turning occasionally, until the kebabs are cooked through and have a slightly charred appearance.
Remove the kebabs from the grill or oven and let them rest for a few minutes before serving. Serve hot with mint chutney and lemon wedges.
