Chicken Schezwan Fried Rice
Chicken Schezwan Fried Rice is a delicious Indo-Chinese dish that combines spicy Schezwan sauce with tender chicken and flavorful rice, perfect for a satisfying meal. Cook 250 grams of basmati rice in a pot of boiling water until it's 90% cooked. Drain the water and spread the rice on a plate to cool.

In a bowl, marinate 200 grams of boneless chicken pieces with 1 tablespoon of ginger-garlic paste, 1 tablespoon of soy sauce, and a pinch of salt. Set aside for 15-20 minutes.

Heat 2 tablespoons of oil in a wok or large pan over medium-high heat. Add the marinated chicken pieces and stir-fry until they are cooked through. Remove the chicken from the pan and set aside.

In the same pan, add 1 tablespoon of oil and sauté 1 finely chopped onion, 1 tablespoon of minced garlic, and 1 tablespoon of minced ginger until the onions turn translucent.

Add 1/2 cup of chopped bell peppers, 1/2 cup of chopped carrots, and 1/2 cup of chopped beans to the pan. Stir-fry the vegetables for 3-4 minutes until they are slightly tender.

Add 3 tablespoons of Schezwan sauce, 1 tablespoon of soy sauce, 1 tablespoon of vinegar, and salt to taste. Mix well and cook for 2 minutes.

Add the cooked chicken pieces and cooked rice to the pan. Mix everything well, ensuring the rice and chicken are coated with the sauce.

Finally, add 2 tablespoons of chopped spring onions and mix well. Cook for another 2 minutes, then turn off the heat.
