Chicken Manchow Soup
Chicken Manchow Soup is a delicious Indo-Chinese soup with a spicy and tangy flavor, loaded with chicken, vegetables, and crunchy fried noodles. Ingredients: Boneless chicken, Chicken stock, Corn starch, Capsicum, Onion, Garlic, Carrot, Soy sauce, Vinegar, Spring onion, Plain noodles, Green chilli, Cooking oil, Cabbage, Ginger

In a bowl, marinate 200 grams of boneless chicken pieces with 1 tablespoon of soy sauce, 1 tablespoon of cornflour, and salt to taste. Set aside for 15 minutes.

Heat 2 tablespoons of oil in a deep pan and sauté the marinated chicken pieces until cooked. Remove from the pan and set aside.

In the same pan, add 1 tablespoon of oil and sauté 1 tablespoon of finely chopped ginger, 1 tablespoon of finely chopped garlic, and 2 finely chopped green chilies for a minute.

Add 1/4 cup of finely chopped onions, 1/4 cup of finely chopped carrots, 1/4 cup of finely chopped capsicum, and 1/4 cup of finely chopped cabbage. Cook for 2-3 minutes until the vegetables are slightly tender.

Add 4 cups of chicken stock to the pan and bring it to a boil.

In a small bowl, mix 2 tablespoons of cornflour with 1/4 cup of water to make a slurry. Add this slurry to the boiling soup, stirring continuously to avoid lumps.

Add the cooked chicken pieces, 1 tablespoon of soy sauce, 1 tablespoon of vinegar, and salt to taste. Simmer the soup for 5-7 minutes.

Garnish the soup with 1/4 cup of chopped spring onion greens and 1/2 cup of fried noodles. Serve hot.
