Cheese Masala Dosa
Cheese Masala Dosa is a delicious and mouth-watering fusion of the traditional South Indian dosa filled with a scrumptious mixture of potatoes, spices, and cheese.

Prepare the dosa batter by soaking 1 cup urad dal and 2 cups rice separately for 4-5 hours. Grind them separately into a smooth paste, mix them together, and ferment overnight.

For the masala filling, boil 2-3 medium-sized potatoes, peel and mash them.

Heat 2 tablespoons of oil in a pan, add 1 teaspoon mustard seeds, 1 teaspoon urad dal, and a pinch of asafoetida. Let them splutter.

Add 1 finely chopped onion, 1-2 chopped green chilies, and a few curry leaves. Sauté until the onions turn golden brown.

Add 1/4 teaspoon turmeric powder, mashed potatoes, salt to taste, and mix well. Cook for 2-3 minutes and set aside.

Heat a non-stick tawa or dosa pan on medium flame. Pour a ladleful of dosa batter and spread it evenly in a circular motion.

Drizzle some oil or ghee around the edges of the dosa and cook until it turns golden brown.

Place 2-3 tablespoons of the potato masala filling in the center of the dosa and sprinkle grated cheese (preferably mozzarella or cheddar) generously over the masala.

Fold the dosa in half or roll it, and cook for another minute until the cheese melts.

Serve hot with coconut chutney and sambar.
