Prepare green chutney by blending together 1 cup of fresh coriander leaves, 1/2 cup of fresh mint leaves, 2-3 green chilies, 1/2 inch piece of ginger, 1 clove of garlic, 1 tablespoon of lemon juice, salt to taste, and a little water until smooth.
Take 8 slices of bread and evenly spread butter on one side of each slice.
Spread a generous layer of green chutney on the buttered side of 4 bread slices.
Place 50 grams of grated cheese (preferably mozzarella or cheddar) on top of the chutney layer.
Cover the cheese layer with the remaining 4 bread slices, buttered side facing down.
Heat a non-stick pan or sandwich maker and place the sandwiches on it. Cook until both sides are golden brown and the cheese has melted.
Remove from heat, let it cool for a minute, and then cut each sandwich into halves or quarters.
