Boil 2-3 medium-sized potatoes, peel and mash them in a bowl.
Add 1/2 cup of finely chopped onions, 1/4 cup of boiled peas, 1/2 teaspoon of grated ginger, 1/2 teaspoon of chaat masala, 1/2 teaspoon of red chili powder, 1/4 teaspoon of garam masala, salt to taste, and 2 tablespoons of chopped coriander leaves. Mix well.
Divide the mixture into equal portions and shape them into round patties.
In a separate bowl, mix 1/4 cup of cornflour with 1/4 cup of water to make a thick paste.
Dip each patty into the cornflour paste and then coat it with breadcrumbs.
Heat oil in a pan and shallow fry the patties until they turn golden brown and crispy on both sides. Drain on paper towels.
Slice 4 burger buns in half and toast them on a pan with a little butter.
Assemble the burger by placing a lettuce leaf on the bottom half of the bun, followed by a slice of tomato, the aloo tikki patty, a slice of onion, and a dollop of mayonnaise and tomato ketchup. Cover with the top half of the bun.
Serve the aloo tikki burgers hot with a side of fries or a salad.
