Rasam

Rasam is a tangy and spicy South Indian soup that is both delicious and comforting. Made with tamarind, tomatoes, and a blend of spices, it is perfect for sipping on a cold day or as an accompaniment to rice. Ingredients: Tomato, Tamarind, Ghee, Black pepper powder, Turmeric powder, Curry leaves, Mustard seeds, Salt, Garlic, Coriander, Cumin seeds, Dry red chilli, Rasam masala

Recipe

Soak 50 grams of tamarind in 1 cup of warm water for 10-15 minutes. Squeeze the tamarind to extract the pulp and strain the liquid. Discard the tamarind solids.

In a pan, heat 2 tablespoons of oil and add 1 teaspoon of mustard seeds. Once they start to splutter, add 1 teaspoon of cumin seeds, 1 sprig of curry leaves, and 2-3 dry red chilies. Sauté for a minute.

Add 1 finely chopped tomato and cook until it turns soft and mushy.

Add the tamarind extract, 1/2 teaspoon of turmeric powder, 1 teaspoon of rasam powder, and salt to taste. Mix well and bring the mixture to a boil.

Add 3 cups of water and let it simmer for 10-15 minutes on low heat.

In a separate pan, heat 1 teaspoon of ghee and add 1/2 teaspoon of cumin seeds, 1/2 teaspoon of black pepper, and 1/2 teaspoon of crushed garlic. Sauté for a minute and add this tempering to the rasam.

Garnish with chopped coriander leaves and serve hot.
