Pineapple Kheer
Pineapple Kheer is a delightful and refreshing Indian dessert made with juicy pineapple chunks and creamy milk, flavored with aromatic cardamom and saffron. It's a perfect treat for festive occasions or family gatherings.

Peel and chop 250 grams of fresh pineapple into small pieces. Set aside.

In a heavy-bottomed pan, heat 1 liter of full-fat milk on medium flame. Keep stirring occasionally to prevent it from sticking to the bottom.

Once the milk starts boiling, reduce the flame and let it simmer for 10-15 minutes until it thickens slightly.

Add 100 grams of sugar to the milk and stir well until the sugar dissolves completely.

Add the chopped pineapple pieces to the milk and cook for another 5-7 minutes on low flame.

In a small bowl, soak a pinch of saffron strands in 2 tablespoons of warm milk for 5 minutes. Add this saffron milk to the kheer and mix well.

Crush 4-5 green cardamom pods and add the seeds to the kheer. Stir well to combine.

Cook the kheer for another 5 minutes on low flame, then turn off the heat. Allow it to cool down to room temperature.

Refrigerate the pineapple kheer for at least 2 hours before serving. Garnish with chopped nuts like almonds, pistachios, or cashews before serving.
