Peel and segment 2 medium-sized oranges, removing any seeds. Keep the orange segments aside.
In a blender, add 250 grams of chilled plain yogurt (dahi), the orange segments, 2 tablespoons of sugar (adjust according to taste), and 1/4 teaspoon of cardamom powder (elaichi).
Blend the mixture until smooth and frothy. If the lassi is too thick, add a little cold water or milk to adjust the consistency.
Pour the orange lassi into glasses and garnish with a few strands of saffron (kesar) and some crushed pistachios (pista) for added flavor and visual appeal.
Serve the orange lassi chilled.
