Oats Khichdi
Oats Khichdi is a healthy and delicious Indian dish made with oats, vegetables, and spices. It's a perfect meal option for those looking for a nutritious and comforting meal.
Ingredients: Oats, Curd, Moong dal, Red chilli powder, Cumin seeds, Mixed vegetables, Ginger garlic paste, Onion, Coriander, Turmeric powder, Salt, Cooking oil

Rinse 1 cup of oats in water and drain. Set aside.

Heat 2 tablespoons of oil or ghee in a pressure cooker or a deep pan. Add 1 teaspoon of cumin seeds and let them crackle.

Add 1 finely chopped onion and sauté until it turns golden brown.

Add 1 teaspoon of ginger-garlic paste and sauté for a minute.

Add 1/2 cup of chopped mixed vegetables (carrots, beans, peas, and cauliflower) and sauté for 2-3 minutes.

Add the rinsed oats, 1/4 cup of washed and soaked moong dal (yellow lentils), 1/2 teaspoon of turmeric powder, 1/2 teaspoon of red chili powder, and salt to taste. Mix well.

Add 3 cups of water and stir well. If using a pressure cooker, close the lid and cook for 2-3 whistles. If using a pan, cover and cook on low heat for 15-20 minutes or until the oats and lentils are cooked.

Once cooked, let the pressure release naturally (if using a pressure cooker). Open the lid and give the khichdi a gentle stir.

Garnish with chopped coriander leaves and serve hot with yogurt or raita.
