Moong Dal Tadka
Moong Dal Tadka is a delicious and comforting Indian dish made with yellow split moong dal, aromatic spices, and a flavorful tempering. It's perfect for a wholesome meal, served with rice or roti.

Wash 1 cup (200 grams) of yellow split moong dal thoroughly and soak it in water for 30 minutes. Drain the water and set aside.

In a pressure cooker, add the soaked moong dal, 3 cups (750 ml) of water, 1/2 teaspoon turmeric powder, and salt to taste. Cook for 3-4 whistles on medium flame. Once the pressure releases, open the cooker and check if the dal is cooked well. If not, cook for another whistle.

In a separate pan, heat 2 tablespoons of ghee or oil. Add 1 teaspoon cumin seeds and let them crackle.

Add 1 finely chopped onion and sauté until it turns golden brown.

Add 1 teaspoon ginger-garlic paste and sauté for a minute.

Add 2 finely chopped tomatoes and cook until they turn soft and mushy.

Add 1/2 teaspoon red chili powder, 1/2 teaspoon coriander powder, and 1/4 teaspoon garam masala. Cook for 2-3 minutes, stirring occasionally.

Pour the cooked dal into the pan with the onion-tomato mixture. Mix well and let it simmer for 5-7 minutes.

In a small tadka pan, heat 1 tablespoon of ghee. Add 1/2 teaspoon cumin seeds, 2-3 dry red chilies, and a pinch of asafoetida. Let them crackle for a few seconds.

Add 8-10 curry leaves and 2-3 finely chopped garlic cloves. Sauté until the garlic turns golden brown.

Pour this tempering over the simmering dal and mix well. Cook for another 2-3 minutes.

Garnish with chopped coriander leaves and serve hot with rice or roti.
