Khajoor Kheer
Khajoor Kheer is a delicious and nutritious Indian dessert made with dates, milk, and rice. It's a perfect treat for those with a sweet tooth and a great way to incorporate the goodness of dates into your diet.

Soak 50 grams of rice in water for 30 minutes, then drain and set aside.

Remove seeds from 200 grams of dates and chop them into small pieces.

In a heavy-bottomed pan, heat 1 litre of full-fat milk on medium flame. Bring it to a boil, stirring occasionally to prevent it from sticking to the bottom.

Add the soaked and drained rice to the boiling milk. Cook on low flame, stirring occasionally, until the rice is cooked and the milk has thickened (approximately 20-25 minutes).

Add the chopped dates to the pan and mix well. Cook for another 5-7 minutes, allowing the dates to soften and blend with the kheer.

Add 50 grams of sugar (adjust according to taste) and a pinch of cardamom powder to the kheer. Stir well and cook for another 2-3 minutes.

Turn off the heat and let the khajoor kheer cool down to room temperature. You can serve it warm or chilled, garnished with chopped nuts like almonds and pistachios.
