Karela Chips
Crunchy and delicious, karela chips are a healthy snack made from thinly sliced bitter gourd, seasoned with spices, and deep-fried to perfection.
Ingredients: Besan, Bitter gourd, Rice flour, Turmeric powder, Masala, Tomato sauce, Chutney, Red chilli powder, Salt, Cooking oil

Wash 250 grams of bitter gourd (karela) thoroughly and slice them into thin rounds. Remove the seeds if desired.

In a mixing bowl, add the sliced karela, 1 teaspoon of salt, and 1/2 teaspoon of turmeric powder. Mix well and let it sit for 20-30 minutes. This will help reduce the bitterness of the karela.

After 30 minutes, squeeze out the excess water from the karela slices and transfer them to a clean bowl.

Add 1 tablespoon of gram flour (besan), 1 tablespoon of rice flour, 1/2 teaspoon of red chili powder, and 1/2 teaspoon of chaat masala to the karela slices. Mix well to coat the karela evenly with the spices and flours.

Heat oil in a deep frying pan or kadai over medium heat. Once the oil is hot, carefully drop the spiced karela slices into the oil, one by one, making sure they don't stick together.

Fry the karela chips until they turn golden brown and crispy. Keep stirring occasionally to ensure even cooking.

Using a slotted spoon, remove the karela chips from the oil and place them on a paper towel to absorb excess oil.

Serve the karela chips hot with a side of mint chutney or ketchup.
