Kaju Paneer Masala
Kaju Paneer Masala is a rich and creamy Indian dish made with paneer, cashews, and a blend of aromatic spices. It's perfect for special occasions and is sure to impress your guests.

Soak 100 grams of cashews in warm water for 30 minutes, then drain and blend them into a smooth paste. Set aside.

Heat 2 tablespoons of oil in a pan and add 1 teaspoon of cumin seeds. Once they start to crackle, add 1 finely chopped onion and sauté until golden brown.

Add 1 tablespoon of ginger-garlic paste and sauté for 2 minutes. Then, add 2 chopped tomatoes and cook until they turn soft and mushy.

Add 1 teaspoon of turmeric powder, 1 teaspoon of red chili powder, 1 teaspoon of coriander powder, and 1 teaspoon of garam masala. Cook for 2-3 minutes, stirring occasionally.

Add the cashew paste to the pan and cook for another 2-3 minutes. Then, add 1 cup of water and bring the mixture to a boil. Lower the heat and let it simmer for 5-7 minutes.

Add 250 grams of cubed paneer to the gravy and cook for 5 minutes. Finally, add 1/4 cup of fresh cream and 1 teaspoon of kasuri methi (dried fenugreek leaves), and mix well. Cook for another 2 minutes.

Garnish with chopped coriander leaves and serve hot with naan, roti, or rice.
