Corn Soup
Corn soup is a delicious and comforting dish made with fresh corn, vegetables, and a blend of Indian spices. It's perfect for a light meal or as a starter to warm up your taste buds. Ingredients: Corn, Tomato, Ginger, Black pepper powder, Green chilli, Coriander, Corn starch, Onion, Salt, Cooking oil

Take 250 grams of fresh corn kernels and boil them in 500 ml of water for 10-15 minutes until they become soft. Drain the water and keep the corn aside.

In a pan, heat 1 tablespoon of oil. Add 1 finely chopped onion, 1 finely chopped green chili, and 1 teaspoon of grated ginger. Sauté for 2-3 minutes until the onions turn translucent.

Add 1 finely chopped tomato and cook for another 2-3 minutes until it becomes soft.

Add the boiled corn kernels to the pan and mix well.

In a blender, blend half of the corn mixture to a smooth paste. Add this paste back to the pan with the remaining corn mixture.

Add 500 ml of vegetable stock or water to the pan and bring it to a boil.

Add salt to taste and 1/4 teaspoon of black pepper powder. Simmer the soup for 5-7 minutes.

In a small bowl, mix 1 tablespoon of cornflour with 2 tablespoons of water to make a slurry. Add this slurry to the soup and cook for another 2-3 minutes until the soup thickens.

Garnish the corn soup with chopped coriander leaves and serve hot.
