Baingan Masala
Baingan Masala is a delicious and flavorful Indian dish made with brinjal (eggplant) cooked in a rich and spicy tomato-based gravy. It's a perfect accompaniment to roti, naan, or rice.
Ingredients: Brinjal, Turmeric powder, Onion, Cumin seeds, Tomato, Garam masala, Red chilli powder, Coriander powder, Ginger garlic paste, Coriander, Salt, Cooking oil

Wash and cut 500 grams of brinjal into medium-sized pieces. Soak them in water for 10 minutes to prevent discoloration.

Heat 2 tablespoons of oil in a pan over medium heat. Add 1 teaspoon of cumin seeds and let them splutter.

Add 1 finely chopped onion and sauté until it turns golden brown.

Add 1 tablespoon of ginger-garlic paste and sauté for 2 minutes.

Add 2 chopped tomatoes and cook until they turn soft and mushy.

Add 1 teaspoon of turmeric powder, 1 teaspoon of red chili powder, 1 teaspoon of coriander powder, and 1 teaspoon of garam masala. Cook for 2-3 minutes until the spices are well-blended.

Drain the brinjal pieces and add them to the pan. Mix well to coat the brinjal with the masala.

Add 1 cup of water and salt to taste. Cover the pan and cook on low heat for 15-20 minutes, or until the brinjal is tender and the gravy thickens.

Garnish with chopped coriander leaves and serve hot.
