Heat 2 tablespoons of ghee in a pan over medium heat.

Add 3 chopped shallots and 1 cubic inch of minced ginger to the pan.

Fry the ginger and shallots until they begin to brown slightly.

Add 1 teaspoon of garam masala, 1/2 teaspoon of cardamom powder, 1/2 teaspoon of ground coriander, and 1 teaspoon of chili pepper flakes to the pan.

Stir in 4 chopped plum tomatoes and 1/2 cup of chopped cashews, and heat for one minute.

Transfer the mixture to a food processor and blend until smooth.

Pour the blended mixture back into the pan and add 200g of paneer cheese, diced into 1/2 cubic inch pieces.

Stir the mixture until the paneer is heated through.

Add 1/3 cup of yoghurt to the pan and blend well.
